Lentil salad with beetroot and goat's cheese

INGREDIENTS for 2 people

  • 200 grams lentils

  • 250 grams cooked beetroot cut into pieces

  • 3 tablespoons balsamic vinegar

  • 75 grams mixed lettuce

  • 150 grams goat's cheese

  • Handful of unroasted walnuts

  • Handful of fresh parsley
